pizza pizzaz


man was i jonesing for pizza saturday night. rather than attempting to curve my craving by drinking lots of water or doing 20 push ups or running around the block (or other crazy remedies people use to kick a craving) i succumbed to my pizza lust and made 2 types of pizza with my pops- bbq "chikn" (that's how vegans spell chicken supposedly) and pesto to satisfy my pizza crave. it turned out to be a danky dank meal i'd say! and even my dad (who isn't vegan but LOVES when i cook for him...i guess he's a closet vegan?...) was stoked on it!

instead of feeling poopy and guilty (how i used to feel after eating heavy, cheesy pizza back in the day before i went vegan), i felt GREAT and happy because vegan pizza is lighter and healthier if you load it with lots of veggies like we did!

try it for yourself!

what you'll need for the bbq "chikn" side of the pizza:

  • wheat pizza dough from trader joe's (duh...can't have pizza without dough!)
  • bbq sauce
  • chickenless bbq pulled chikn from trader joe's
  • red onion, sliced
  • cilantro (optional)
  • plum tomatoes, cut in half
what you'll need for the pesto side of the pizza:

  • pizza sauce (trader joe's makes a good one)
  • pesto (i made some from scratch a couple months ago and froze it to use later, but you can find vegan or regular pesto sauce at most grocery stores)
  • red onion
  • portabello mushroom, sliced
  • plum tomatoes, cut in half
  • basil leaves, thinly sliced 
  • crushed garlic 


do it!:


  1. remove dough from bag and place on lightly floured work surface. let dough rest for 20 minutes then stretch dough by hand to desired thickness.
  2. top dough with favorite ingredients. for one half of pizza dough i put the bbq chikn ingredients and on the other half i layered the pesto pizza ingredients.
  3. bake in preheated 450 degree oven for 8-10 minutes! 
Enjoy the dang thing and try not to have this little bugger eat the scraps (he's very persistent and cute!)
